These are complex, grown up cookies (although my kids sneaked quite a few). These disappear so fast that I have trouble getting a photo. How great is getting bacon into your cookies? Makes a scant 2 dozen.
Ingredients:
1 1/4 cup unbleached all purpose flour
1/2 cup sugar, plus more for sprinkling
3/4 to 1 t. each cinnamon, ginger, cloves
1 egg
1/2 cup bacon fat, softened
2 T Fat Stone Farm Apple Ginger Syrup, or 1/2 of a mini bottle
Directions:
Preheat oven to 350 F. Grease or cut parchment paper for cookie sheets. Pulse flour, sugar, and spices in a food processor, or mix with a fork in a mixing bowl. Add egg, fat, and Apple Ginger Syrup. Process or mix with beaters until dough comes together, adding more Apple Ginger Syrup if it's dry. Drop by tablespoons, or roll into balls, onto cookie sheets. Press with a fork to slightly flatten, and sprinkle with more sugar. Bake for 13-15 minutes, or until edges begin to brown. Hide them before they are gone.
